We are looking for excellence rather than consistency (which is usually sought after by non-vintage bruts), respecting the character of the vintage rather than negating it, and showcasing a great wine rather than maintaining a style. Reserve wines are added to enhance complexity, but without masking the character of the base year. Cuvée 700 is a blend of several years and therefore cannot be identified by the mention of one of them: the choice of a number was essential, and rather than inventing it from scratch, we preferred to highlight the production number that the Cuvée bears in our bottling records. Cuvée No. 1 was created by the House in 1898 to celebrate its first centenary. And it was from Cuvée No. 728, made from the 2000 harvest, that the adventure began for us.\u003cbr\u003e\u003cbr\u003eCuvée 700 comes from our three Grands Crus and our two Premiers Crus; it is made only from the first pressings and is vinified in large oak casks, almost always without filtration, making it above all a Grand Vin de Champagne. It naturally has remarkable aging potential, which is why we offer it with two different maturation periods (\"normal\" and \"Dégorgement Tardif\" - late disgorgement).\u003cbr\u003e\u003cbr\u003e\u003c\/span\u003e\u003c\/em\u003e\u003cspan\u003e2018, our harvest in Aÿ, Dizy, Hautvillers (68%), Avize, and Oiry (32%): the winter was exceptionally rainy, and spring was mild and stormy. The weather changed from June, becoming beautiful and dry, leading to a particularly early harvest: we began picking on August 30th and finished on September 11th.\u003cbr\u003eThe health of the grapes was perfect, the harvest abundant with very good ripeness and moderate acidity. The palate is vinous and digestible, with a flavorful length and plenty of salinity. Low dosage (2g) for a ripe, dynamic, deep, and extended whole. The bead is very fine.
