These very low-yielding vines, planted in organic matter-poor soils on south-facing slopes, produce approximately 2,500 kg\/ha. The grapes are hand-harvested from these vines using small 20-kilo crates, and a meticulous selection of the best bunches takes place on the sorting table in the winery.\u003c\/p\u003e\n\u003cp\u003eAfter a few days of cold pre-fermentation maceration to maximize aromas, fermentation takes place in stainless steel tanks at a maximum temperature of 25 °C. After a 20-day maceration, the wine is transferred to new French oak barrels, where it undergoes malolactic fermentation. It then ages for 16 months in the same\u003cstrong\u003e\u003cspan\u003e \u003c\/span\u003ebarrels\u003c\/strong\u003e, before refining in the bottle for 12 months before commercialization.\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAn intense cherry red color, with violet reflections that make it a very lively and brilliant wine. Elegant, with notes of ripe red and black fruits and a fresh and original touch, which, combined with sweet spices and fine toasted notes, make this wine very expressive and full of personality.
