Áster - Ribera Del Duero (Spain) - 2016 - Red

On October 15th, we began hand-picking the grapes, with an initial selection made in the vineyard, harvesting only the best bunches, perfectly ripe and in perfect condition. A second selection was carried out at the sorting table in the cellar. After destemming and gentle crushing, the grapes were placed in vats where they underwent alcoholic fermentation at a temperature below 28°C.

After 16 days of fermentation and maceration, the wine underwent malolactic fermentation in French oak barrels, with weekly bâtonnage over a two-month period. It was aged for 22 months in new French oak barrels (70%) and the remainder in French oak barrels with two previous wines. We racked this wine three times, using traditional methods, and bottled it in February 2019.

Ideal with appetisers, vegetables and rice dishes. Domestic poultry and feathered game, fish and stews. Creamy and fairly young cheeses. Roast lamb.
