Aster - Finca El Otero - Ribera Del Duero (Spain) - 2018

The plot is located on slightly eroded slopes in a dry and unfertile area with very high-quality soil. During exceptional harvests, its grapes are used to produce this wine.

We harvested the grapes in 20 kg crates, taking advantage of the region's typically low temperatures. This allowed us to carry out a natural cold maceration for 9 days. After passing over the sorting table, destemming and gentle crushing, the grapes were placed in vats where alcoholic fermentation took place for 14 days.

The wine was then transferred to barrels where its malolactic fermentation was carried out over 62 days, with weekly bâtonnage to stir the lees. We then selected the best barrels, which were transferred to new French oak barrels and aged for 16 months with two traditional-style rackings. The wine was bottled in May 2018.
