Protos 27 - Ribera del Duero (Spain) - 2021 - Red

Protos 27 2021 (excellent vintage) comes from 50-year-old Tempranillo vines, mainly located in the province of Burgos, at an altitude of over 800 meters. These very low-yielding vines, planted in soils poor in organic matter on south-facing slopes, produce around 2,500 kg/ha. The grapes are hand-harvested from these vines using small 20-kg crates, and a meticulous selection of the best bunches takes place on the sorting table in the winery.

After a few days of cold pre-fermentative maceration to maximize aromas, fermentation takes place in stainless steel tanks at a maximum temperature of 25°C. After 20 days of maceration, the wine is transferred to new French oak barrels, where it undergoes malolactic fermentation. It then ages for 16 months in the same barrels, before refining in bottle for 12 months before commercialization.
